MASSIMILIANO MARIA "Max" MODESTI - GHIONE

lives between Shanghai, Bangkok and Hong Kong

 

He comes from a very old Roman family and lives in China/South East Asia since 1989. 

For over 30 years he has offered private consulting services, M&A - JV - Marketing, to foreign investors operating in China. In the early 2000 he was Guest Marketing Lecturer at Ningbo University, China.

Chef for passion since his early years, in the 90's he founded and directed an Italian Cooking School in Hong Kong. Max has trained chefs for top level restaurants and through the years has offered services to more than 80 F&B/Event/Entertainment projects across China and South-East Asia. Max is among the founders and shareholders of the Tripadvisor top rated italian restaurant Goodfellas

He speaks Italian, Spanish, English, French and basic Chinese.

SAM “Shanghai Sam” MO

Sam is an incredibly talented Chef with a very inquisitive and passionate nature. He has over 20 years experience on a wide array of different western cuisines, both in 5 Stars Hotels and Free Standing Restaurants, from traditional to fusion and to casual to fine dining, while also collaborating with well-known International Chefs and high profile media appearances. His journey started in 1997 at the Hilton in Shanghai and again from 1999 to 2001 at the Novotel where he developed a good understanding of working in a kitchen that never sleeps. At the end of 2001 Sam moved his ever growing skills to Park 97 in Shanghai, the famous Club cum Restaurant of the early 2000’s, where many celebrities of the time were used to dine and party. It was late 2003 when he met world class Chef David Laris who took him soon after to start with a new adventure at the very successful 3 on the Bund where he was at the helm of the kitchen operations for 7 amazing years during which he was also asked to take part in the TV program  "You Are the Chef" by ICS and also participated in a number high profile food promotions and launching F&B related TV programs in Macau and Singapore. Before joining B&M Creative Solutions Ltd. Sam was, from 2010 to July 2017, Chef de Cuisine at the prestigious Sky Restaurant at The House of Roosevelt on Bund 27, taking care of high society guests from all over the world. We are fortunate Sam chose to join our company, for us to be a more complete outfit with his knowledge and passion and for him to make a new experience as F&B Consultant in our group of professionals that will contribute to his personal growth as a person and Chef.

NICOLA "Nico" GRIMALDI

lives between Shanghai and Hong Kong


Nico, a dynamic and enthusiastic Italian from Puglia with passion for F&B and a wiz of Excel, benefitting from his long experience as Financial Advisor and Market Analyst for Italy’s top bank, has over 10 years of experience on a wide range of different western restaurant, casual and fine dining restaurant. A savvy marketer with a track record in improving revenue, reducing staff turnover and increasing customer satisfaction. His restaurant management journey started in 2008 at the Enrigo Italian Bistrot in Cary, North Carolina. He then moved to Forli’ Restaurant in San Francisco, followed by Vic’s Italian Trattoria in Raleigh, North Carolina (USA). 
At the begin of 2013, Nico’s management style helped turn around Gianni’s Italian Trattoria in Hong Kong, by increasing its cash flow and capital income as well as optimizing costs.

In 2015 he moved to Shanghai and as GM joined Jacky’s Group company managing both PRIMO1 and Top Chef’s cash flow, revenue generation, inventory control, food cost, employee relationship. He also consulted for City Shop (13 outlets in Shanghai) and Da Ivo Italian fine dining on the Bund. 

Great to have Nico on boards as he will bring an amazing contribution to our team and he will be our representative in Hong Kong

ILYA  “The Tzar" KHOKHLOV

lives in Shanghai

Born in Vladivostok - a small Russian city on the Pacific Coast bordering Japan, Korea, and China. 

His Mixology Journey started during high school when he entered into the high end Cuckoo Club (July 2011 - June 2012) at age 15 and realized that Bartending was his life and passion. After 2 years experience in 3 different top Cocktail Bars in Vladivostok, he moved at barely 17, to Shanghai in order to further his professional growth as well as getting his International Trade Bachelor Degree in Chinese.  This move changed his life as he’s experience in Shanghai took him, for the following 5 years, to work as Bar Manager/Mixologist in different concepts, 4 of them being start ups, including Salotto G and also held the enviable position of Chief Mixologist at Bacardi China.

He joined the B&M family after the Salotto G experience and since that time he groomed his overall cocktail making skills complementing it with furthering his knowledge in Cost Management Solutions for both Bars and Restaurants.

His personal credo is “Mixology is fun & Cocktail is art”. He doesn't set any limit to his imagination, always testing the infinte possibilities of his passion.
